2 cooked beets (we buy them pre-cooked from Aldi)
2 tbsps tahini (easily available in the ‘world foods’ aisle of most supermarkets)
1 tbsp olive oil
Juice of 1 lemon
1 tbsp apple cider vinegar
1 heaped tsp cumin
- Chop the beetroot into smaller pieces and place into a food processor.
- Add the rest of the ingredients into the food processor and whizz!
- Pour into a bowl, simples! Delicious served chillled, and freezes well.
