Serves: 4
Ingredients:
1 bag stir fry veg (whichever variety you prefer!)
2 large handfuls spinach
1/4 lettuce chopped/shredded
10 cherry tomatoes
1/2 cucumber
1 lime or lemon
1 tbsp olive oil
Salt and pepper
Optional – Sunflower/Sesame seeds to garnish
Instructions:
- Put the stir fry veg, spinach and lettuce into a large bowl.
- Chop the tomatoes and cucumber (however you like!) and add to the mix.
- Squeeze the lemon/lime juice over the top and drizzle the olive oil over too. Add some salt and pepper.
- Using your hands, mix the salad together.
- Add the seeds if using and you’re done!
