Dressing Pad-Thai Style-y

This Pad-Thai style dressing makes anything taste 1000 times better! Ingredients:

  • 1/4 cup sunflower seed butter OR peanut butter (we used sunflower seed because some places of work don’t allow peanuts, but either will do!)
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp tamari/soy sauce
  • 1/2 tsp ground ginger
  • 1/2 tsp ground garlic (or a garlic clove)
  • Pinch salt
  • 1/4 tsp red pepper flakes OR chilli powder
  • (optional tbsp rice syrup/raw honey/xylitol)
  • 1/4 cup water (you can add a bit more a tbsp at a time depending on the consistency you want).

 

Instructions:

  • Add all the ingredients into a food processor and whizz together until smooth.
  • Decant into a jar and keep in the fridge.
