These bites of delicious-ness make a great snack mid-afternoon or a quick pud any time of day! Especially great for all those chocolate-coconut-combo lovers out there.
½ cup Buckwheat flakes/Oats (if you don’t include the protein powder, include an extra heaped tbsp of this and of cocoa)
3 tbsp protein powder (we get ‘pulsin” ‘pea’ or ‘hemp’ for dodgy-ingredient-free and budget reasons, from Amazon or in Tesco)
2 tbsps cocoa/cacoa
Handful coconut flakes
2 tbsps sugar free nut butter (peanut or almond works best)
½ cup coconut milk
1 tsp vanilla extract
6 drops liquid stevia, 2 tsp honey or xylitol (can sub for whatever sweetner you use)
- Mix the dry ingredients together, including protein powder if using it and the coconut flakes.
- In a separate dish, mix the wet ingredients together.
- Add the wet and dry ingredients together, stir and then finish by combining with your hands.
- Split the ‘dough’ into 8 pieces and roll into balls.
- Store in the fridge.
