Mix & Match Veggie Bowl

Serves: 2

Ingredients:

2 carrots

2 courgettes

10 cherry tomatoes

3 tsps miso paste (could use a nut butter or tahini instead)

2 tsp olive oil

1/4 cup water

1 tsp apple cider vinegar

1/2 tsp ginger

2 tsp tamari/soy sauce

1/2 tsp chilli flakes/powder

Salt and pepper to taste

ALTERNATIVELY: Keep the veggies the same (and follow the same process) but sub the dressing for our Pad Thai or Paprika-Mustard dressing instead. 

 

Instructions:

  • Spiralize/julienne peel/thinly slice the carrots and courgettes into a bowl.
  • Add the rest of the ingredients into a food processor/blender and combine.
  • Microwave the veggies for 1 minute.
  • Pour the dressing over the top and mix so that the veggies are covered. Split between two plates/bowls.
  • Chop the tomatoes in half and split between the two portions. Now top with your favourite protein source (we like shredded chicken, chicken thighs, scrambled eggs, good quality sausages or bacon) and enjoy!
